  1. Marinate the chicken: In a bowl, combine the chicken pieces with yogurt, turmeric powder, cumin powder, coriander powder, garam masala, salt, and a little water. Mix well and let it marinate for at least 30 minutes or preferably overnight.
  2. Cook the rice: In a separate pot, bring water to a boil. Add the soaked basmati rice and cook until al dente. Drain the rice and set aside.
  3. Sauté the spices: Heat ghee or clarified butter in a large pot over medium heat. Add the bay leaves, cinnamon stick, cloves, cardamom pod, and onion. Sauté until the onion turns golden brown.
  4. Cook the chicken: Add the marinated chicken pieces to the pot and cook until browned on all sides.
  5. Add the spices and yogurt: Stir in the garlic, ginger, cumin powder, coriander powder, and garam masala. Cook for a few minutes until fragrant.
  6. Add the rice and water: Pour the cooked rice over the chicken mixture. Add enough water to cover the rice by about 1 inch.
  7. Simmer and seal: Bring the pot to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the rice is cooked and the flavors have blended.
  8. Rest and serve: Turn off the heat and let the biryani rest for 5-10 minutes before serving. This allows the flavors to meld together.
